Cured And Preserved Meat Notes


  • Prosciutto vs Serrano Ham: Both are dry-cured hams and are near-identical in use. Serrano is slightly drier and less sweet.

  • Pancetta vs Bacon: Pancetta is salt-cured only (not smoked). In Italian dishes, bacon smoke may alter the character.

  • Guanciale vs Pancetta: Guanciale (cured cheek) has a higher fat ratio and a more delicate, sweet pork flavour — preferred for authentic carbonara and amatriciana.

  • Chorizo (Fresh vs Cured): These behave entirely differently. Fresh chorizo is a raw sausage; cured chorizo is a firm, sliceable product. Never substitute one for the other without processing adjustment.
