Cheese — Notes For Service


  • Melting Cheeses: Gruyère, Emmental, Comté, Raclette, Fontina, Young Gouda, and Havarti all melt smoothly. Avoid using aged or low-fat cheeses when a melt is required.

  • Salty/Brined Cheeses: Feta, Halloumi, and Ricotta Salata are interchangeable in most salad and garnish applications but vary in saltiness — adjust seasoning accordingly.

  • Aged Hard Cheeses: Parmesan, Pecorino Romano, and Grana Padano are close substitutes, but Pecorino is saltier and sharper — reduce added salt.

  • Fresh Soft Cheeses: Ricotta, Quark, Labneh, and Cottage Cheese (blended) work interchangeably in most cooked and uncooked applications.
