  1. Setup: Complete the "Grease Trap Information & Schedule" table for every grease trap in your facility

  2. Scheduling: Use "Next Due Date" and "Status" columns to schedule services proactively. Set calendar reminders for "DUE SOON" items

  3. Record Keeping: After every service, immediately complete a row in the "Maintenance & Service Log" and attach/file the service report

  4. Compliance: Document all regulatory interactions in the "Compliance & Inspection Log"

  5. Review: Assign a manager to review this tracker weekly to ensure compliance and up-to-date status



Step-by-Step Grease Trap Cleaning Instructions

Before You Begin:


  • Safety First: Wear protective equipment (gloves, safety glasses, non-slip shoes)

  • Ventilation: Ensure adequate ventilation - grease traps produce harmful gases

  • Tools Needed: Scraper, shop vacuum, cleaning brushes, bucket, approved cleaning solution, flashlight


Cleaning Process:


  1. Turn Off Power

    • Shut off electricity to any connected equipment

    • Allow trap to cool if connected to hot water lines

  2. Remove the Lid

    • Carefully lift the grease trap lid

    • Set aside in a safe location

  3. Assess Contents

    • Note the levels of grease, water, and solids

    • Take photos for maintenance records if needed

  4. Remove Floating Grease Layer

    • Use a scraper or skimmer to remove the top layer of congealed grease

    • Place grease in appropriate waste container (not down the drain)

  5. Remove Water

    • Use a shop vacuum or pump to remove the water layer

    • Dispose of water according to local regulations

  6. Remove Settled Solids

    • Scrape out food particles and debris from the bottom

    • Use a brush to scrub away stubborn buildup

  7. Clean the Trap

    • Scrub all interior surfaces with approved cleaning solution

    • Pay special attention to baffles and inlet/outlet areas

    • Rinse thoroughly with clean water

  8. Inspect for Damage

    • Check for cracks, loose fittings, or damaged baffles

    • Note any issues in maintenance log

  9. Reassemble

    • Replace all components in reverse order

    • Ensure lid is properly sealed

    • Restore power to connected equipment

  10. Final Steps

    • Test system operation

    • Complete maintenance log entry

    • Schedule next cleaning based on usage and regulations
